The preparation
Step 1:
Pour the water and wine into a saucepan.
Step 2:
Slice the leek and celery. Peel and dice the carrot, onion, celeriac and garlic, then add to the water along with the bay leaves, olive oil, parsley, coriander, paprika, leek and celery. Bring to the boil. Add the fish (with head and bones) and prawns (with shells).
Step 3:
When the water boils, reduce the heat to low, season with salt and pepper and simmer for about 1 hour. Cover with a lid.
Step 4:
After cooking, pour the broth through a fine sieve to remove the bones and shells. The large pieces of vegetables can be washed and reused.
