Delicious homemade fish broth

And here's something really tasty for our fish and seafood lovers: homemade fish stock. A delicious fish stock can be prepared quickly and easily using a wide variety of fish and seafood.

Fish stock can also be used in many dishes, such as soups, paella stock or sauces for fish dishes.
Ingredients

500 g small fish, as shown in the photo below
10 prawns with shells
1 carrot
1 onion
1 leek
1/2 celeriac
2 sticks of celery
2 cloves of garlic
1 teaspoon sweet paprika powder
Salt
Pepper
2 tbsp fresh chopped parsley
2 tbsp fresh chopped coriander
2 bay leaves
2 litres water
1 glass white wine
2 tbsp olive oil

The preparation


Step 1:

Pour the water and wine into a saucepan.

Step 2:

Slice the leek and celery. Peel and dice the carrot, onion, celeriac and garlic, then add to the water along with the bay leaves, olive oil, parsley, coriander, paprika, leek and celery. Bring to the boil. Add the fish (with head and bones) and prawns (with shells).

Step 3:

When the water boils, reduce the heat to low, season with salt and pepper and simmer for about 1 hour. Cover with a lid.

Step 4:

After cooking, pour the broth through a fine sieve to remove the bones and shells. The large pieces of vegetables can be washed and reused.
