Aioli
Who doesn't know aioli, the delicious garlic mayonnaise from Spain? Aioli can be served with many dishes such as meat, fish and vegetables, or simply with bread. It is widely available ready-made, but it tastes best when freshly homemade.
There are two ways to prepare it. The classic method involves crushing garlic in a mortar and gradually adding olive oil while stirring constantly. This requires a lot of time and practice to get it right.
The other, much simpler and safer method is to use a blender or hand blender. Sunflower oil is often used instead of olive oil to make aioli because it has a less intense flavour. If using olive oil, be sure to use a mild olive oil.
Aioli was already known to the Egyptians, but it has long since become established in Spain and is now an integral part of Spanish cuisine.
