Spicy garlic soup

One of Spain's traditional dishes is sopa de ajo, or garlic soup. It originates from Castilla-Leon in northern Spain, but is known and loved throughout the country.

It is very easy to prepare and requires only a few ingredients.

It is an absolute delight, especially during the cold season.
Ingredients

5 tablespoons olive oil
8 garlic cloves
100 g Serrano ham, diced
1/2 baguette
1 teaspoon sweet paprika powder
1 liter meat stock
4 eggs

The preparation


Step 1:

Peel the garlic and slice it finely. Slice the bread as well.

Step 2:

Next, pour the olive oil into a saucepan and heat it up. When the oil is hot, turn down the heat, add the garlic, and fry it for 2-3 minutes, stirring constantly.

Step 3:

Add the Serrano ham and bread and fry briefly. Sprinkle a little salt and paprika powder over the mixture and mix well.

Step 4:

Then add the meat stock. Bring everything to the boil and simmer on a low heat for about 10 minutes, adding more salt if necessary.

Step 5:

Carefully crack the eggs one at a time onto a small plate and slide them into the soup. Then simmer for another 3-4 minutes. Done!

Step 6:

Serve the finished soup hot in soup bowls, placing one egg in each bowl.
