Exceptional paella with spinach

Green paella

One of the most unusual but also one of the tastiest paellas is paella verde with spinach. It combines fish, meat and vegetables.

It is this combination that makes it so special and unique in taste.

A paella that will delight you. It is not as popular as paella valenciana, but it is known everywhere.

There are also other paellas with the name Paella Verde, which are prepared with vegetables only, which is why they are also known as vegetable paellas.
Ingredients

Olive oil
Salt
4 cloves of garlic
200 g diced pork ribs
200 g anchovies
200 g fresh spinach
1 tomato
5-6 saffron threads
350 g short-grain rice
2 litres water

The preparation


Step 1:

Cut open the anchovies along the belly with a small knife and remove the innards. Remove the heads and tails so that only the fillets remain. Wash thoroughly and set aside.

Step 2:

Pour the olive oil into the paella pan, sprinkle in a little salt and heat. Then fry the garlic with the skin on and turn the heat down slightly.

Step 3:

Next, dice the tomato, add it to the pan with the pork ribs and fry for approx. 5 minutes. Then add the anchovy fillets to the pan and fry for 2-3 minutes.

Step 4:

Next, add the water and bring to the boil on the highest heat. Season with salt and add the saffron. After about 5 minutes, reduce the heat to medium and simmer for about 20-25 minutes.

Step 5:

Then add the spinach and simmer for approx. 1-2 minutes. Next, sprinkle in the rice, stir it in a little and continue to simmer until the rice is cooked and the water has evaporated (approx. 20-25 minutes). Done!
