The preparation
Step 1:
Peel and dice the onion. Cut the spring onion into rings. Place both in a large saucepan and fry gently over a low heat with the olive oil and a little salt.
Step 2:
Then wash and dice the tomato and add it to the pan. Continue to fry for approx. 5 minutes. Next, add the butter, allow it to melt and mix well with the onions. Then deglaze with the wine. The wine and butter are optional, but I find that they make the sancocho taste even better and give it a special flavour.
Step 3:
Fill the pot about halfway with water and bring everything to the boil. Then peel and wash the potatoes, cut them into cubes that are not too small, and add them to the pot with the chicken and soup meat.
Step 4:
Chop the coriander finely, add it with the other spices, and season to taste. Peel the yuca and plantains, cut them into large pieces and add them to the pot after about 10 minutes of cooking. Cut the corn into large pieces and add it to the pot.
Step 5:
Cook until everything is done (about 1 hour). Done. Season with salt and pepper to taste if necessary.
