Delicious scrambled eggs with sausage and vegetables

This is a typical dish from Don Quixote's region, Castilla-La Mancha. It is a hearty specialty with lots of calories, but uniquely delicious.

It is quick and easy to prepare and requires only a few ingredients.

It can be enjoyed as an appetizer, tapa, or even as a main course.
Ingredients

4 slices of smoked bacon
2 chorizos (paprika sausage)
4 spring onions or green onions
4 garlic cloves
6 eggs
1/2 teaspoon thyme
Black pepper to taste
1 pinch of salt
8 tablespoons olive oil

The preparation


Step 1:

Peel and dice the onions and garlic.

Step 2:

Dice the bacon and slice the chorizo.

Step 3:

Heat the olive oil in a pan.

Step 4:

When the oil is hot, reduce the heat and fry the bacon and chorizo.

Step 5:

Then add the garlic and onions and fry everything until the onions are translucent, stirring frequently.

Step 6:

In the meantime, crack the eggs into a bowl and beat until frothy. Add salt, thyme, and pepper to taste.

Step 7:

Pour the egg mixture into the pan. Simmer for 2-3 minutes, then stir as you would for scrambled eggs until the egg mixture is cooked through.
