Tortilla con espinaca

The tortilla is certainly one of Spain's most famous dishes. It is served as a starter, tapas or even as a main course.

Although the basic ingredients are just potatoes and eggs, there are many different variations. The classic version is made with potatoes and eggs or potatoes, eggs and onions.

Here I will show you how to make a tortilla that tastes delicious. The tortilla de espinaca, or spinach tortilla.
Ingredients

Olive oil
1 onion
1 clove of garlic
50 g diced bacon
3 medium-sized potatoes
7 eggs
Salt
100 g fresh spinach

The preparation


Step 1:

Peel and dice the onion, potatoes and garlic clove.

Step 2:

Pour olive oil into a medium-sized pan until the bottom is covered, sprinkle in some salt and heat.

Step 3:

Add the onion, bacon and garlic to the pan and fry until the onions are translucent.

Step 4:

Then add the potatoes and fry until they are almost cooked.

Step 5:

Just before the potatoes are cooked, add the spinach and fry for about 1 minute.

Step 6:

In the meantime, whisk the eggs in a bowl and season with salt to taste.

Step 7:

Now add the fried potatoes, onion, bacon, garlic and spinach to the egg mixture and leave to simmer for approx. 5 minutes.

Step 8:

Next, add a little more olive oil to the pan, heat it up and then reduce the heat to low. Add the mixture to the pan, cover with a lid and fry for approx. 5 minutes. After 5 minutes, press down slightly on the sides to see if the bottom is brown yet. If so, place a large flat plate on top of the pan and carefully turn the pan over. Make sure that the plate is larger than the pan and use oven gloves in case any hot oil spills out when turning. Then carefully slide the tortilla from the plate back into the pan and fry for another 5 minutes until this side is brown too.

Transfer to a large plate and serve hot.
